So we had a snow day here today due to the blizzard and crazy cold conditions! I had a different menu planned for tonight but needed something at the grocery store so couldn’t make that. So I dug deep into my freezer and refrigerator and came up with a perfect cold-weather meal!
First, I made vegetarian chili. I had everything on hand including vegetable stock which I had made from leftover vegetables from Thanksgiving.
I also made homemade macaroni and cheese. I was a little bit short on milk and didn’t want to use ours all up because then we would not have any for cereal tomorrow. But I remembered I had frozen some a while back and defrosted that to use.
I am really happy that I have gotten better about freezing things and not just tossing them!
